ROASTED BROCCOLI & CAULIFLOWER BOWL

Serves 2

 

  • 400g of broccoli and cauliflower

  • 2 tbs olive oil

  • 2 cooked beetroots cubed

  • 250g ready to eat quinoa

  • Large handful baby spinach

  • 10 walnuts roasted and chopped a little

  •  

  • 1 tbs tahini

  • 3 tbs houmous

  • 2 tbs water (or 1tbs lemon and 1bs water if you like it zesty)

  • Lemon wedges

 

  1. Toss the broccoli and cauliflower in the oil

  2. Roast in the over at 180C fan  for 25-30 minutes, then leave to cool.

  3. Mix the tahini, houmous and water together.

  4. Build the veggies in a bowl add the quinoa and dressing

  5. Serve with lemon wedges
