ROASTED BROCCOLI & CAULIFLOWER BOWL
Serves 2
400g of broccoli and cauliflower
2 tbs olive oil
2 cooked beetroots cubed
250g ready to eat quinoa
Large handful baby spinach
10 walnuts roasted and chopped a little
1 tbs tahini
3 tbs houmous
2 tbs water (or 1tbs lemon and 1bs water if you like it zesty)
Lemon wedges
Toss the broccoli and cauliflower in the oil
Roast in the over at 180C fan for 25-30 minutes, then leave to cool.
Mix the tahini, houmous and water together.
Build the veggies in a bowl add the quinoa and dressing
Serve with lemon wedges
