LENTIL LOAF

  • 1 tbs olive oil

  • 1 garlic cloved crushed

  • 1 onion chopped

  • 2 celery sticks chopped

  • 100g walnuts chopped

  • 50g breadcrumbs wholewheat

  • 2 tbs parsley chopped fine

  • 1 tbs soya sauce

  • 1 egg beaten

  • Pepper

  •  

  • 175g green lentils uncooked and 450ml water

  • OR  280g cooked lentils

 

  1. Boil the water and cook the lentils for about 40 minutes until soft, allow them to steam off at the end to get rid of the moisture.

  2. Heat a pan and add the oil and onion until softened

  3. Once the lentils and onions are cooled mix everything together

  4. Line a 450g / 1lb loaf tin and lightly oil

  5. Spoon in the mixure

  6. Bake at 180 for 40-50 minutes

  7. Leave in the tin for 2 minutes to cool

  8. Turn out and cool a little more before cutting into slices

 

I like this served with a tomato sauce or as a burger in a bun with salad and mayo.
