QUINOA PORRIDGE
Serves 2
360ml almond milk
45g quinoa
2tbs raisins
6 dried apricots (or use 1-2 fresh)
¼ tsp vanilla extract
Place the milk and quinoa in a pan and bring to a gentle simmer
Cook for around 15 minutes until the quinoa is tender
Stir in the remaining ingredients before serving.
Serve warm or chilled.
Stores in the fridge for up to 3 days.
