QUINOA PORRIDGE

Serves 2

  • 360ml almond milk

  • 45g quinoa

  • 2tbs raisins

  • 6 dried apricots (or use 1-2 fresh)

  • ¼ tsp vanilla extract

 

  1. Place the milk and quinoa in a pan and bring to a gentle simmer

  2. Cook for around 15 minutes until the quinoa is tender

  3. Stir in the remaining ingredients before serving.

  4. Serve warm or chilled.

  5. Stores in the fridge for up to 3 days.
