ROASTED VEGETABLE AND HALLOUMI QUINOA

Serves 2

  • 1 large red onion

  • 1 cougette

  • 2 peppers

  • 175g cherry tomatoes

  • 1 tbs balsamic vinegar

  • 1.5 tsp Worcestershire sauce

  • 1 tsp dried oregano

  • 1 tsp dried basil

  • 1.5 tsp garlic granules (or use 2-3 fresh cloves and roast with the vegetables then squeeze out)

  • 100g quinoa – cooked as above

  • 75g halloumi

  1. Preheat oven to 200c

  2. Chop the vegetables into bite sized chunks

  3. Drizzle the vinegar, Worcestershire sauce and herbs onto the vegetables

  4. Roast in the oven for 15-20 minutes

  5. Take out the oven and mix gently and put back for another 10-15 minutes

  6. Mix the roasted veg into the quinoa

  7. Season to taste

  8. Lay halloumi on top and roast for another 5 minutes
