FEEL GOOD FLAPJACKS
Makes 12
50g butter or dairy free sunflower spread
2 tbs smooth peanut butter
3 tbs maple syrup
2 ripe bananas
1 apple peeled and grated
250g rolled oats (2.5 cups)
85g dried apricots, chopped (1/2 cup)
100g raisins (1/2 cup)
85g mixed seeds (10tbs)
100ml hot water (add slowly to get right consistency)
Heat oven 160c 140fan gas 3
Grease and line a 20cm square tin
Heat the butter, maple syrup and peanut butter in a small pan
Add the mashed banana and apple
Add the hot water (I hold back a quarter of the water to make sure its not too soft)
Mix to combine fully
In a separate bowl mix the oats, dried fruit and seeds
Pour in the other mixture and combine
Tip it into the tin and flatten the top
Bake for 55 minutes or until golden
Leave to cool in the tin
Cut into 12 pieces
Store in airtight container in the fridge
Keeps for up to 3 days.
