OKONOMIYAKI PANCAKE
Serves 1-2
1 egg
2-3 tbs chick pea flour
2 small mushrooms finely sliced
2-3 tbs cabbage finely sliced
2 tbs onions
Sauce of choice i.e. mayonnaise, yogurt, Srirachi, ketchup, tomato salsa.
Mix it all up.
You are aiming for a thin coating over all the veggies.
Heat a frying pan on a medium heat and add a tablespoon of butter or oil.
When hot add all the pancake batter.
Fry on each side for 4-5 minutes until golden brown.
Drizzle lightly with sauce or salsa or serve on the side.
This is a great dish for leftover veggies so add whatever you have to hand. Carrots, radishes and courgettes work well, as does silken tofu.
It also works with 3 small/medium potatoes for a rosti.
