OKONOMIYAKI PANCAKE

Serves 1-2

  • 1 egg

  • 2-3 tbs chick pea flour

  • 2 small mushrooms finely sliced

  • 2-3 tbs cabbage finely sliced

  • 2 tbs onions

  • Sauce of choice i.e. mayonnaise, yogurt, Srirachi, ketchup, tomato salsa.

 

  1. Mix it all up.

  2. You are aiming for a thin coating over all the veggies.

  3. Heat a frying pan on a medium heat and add a tablespoon of butter or oil.

  4. When hot add all the pancake batter.

  5. Fry on each side for 4-5 minutes until golden brown.

  6. Drizzle lightly with sauce or salsa or serve on the side. 

 

This is a great dish for leftover veggies so add whatever you have to hand.  Carrots, radishes and courgettes work well, as does silken tofu.

It also works with 3 small/medium potatoes for a rosti.
