HOMEMADE BAKED BEANS

  • 1 tsp olive oil

  • 1 celery stick diced

  • 1 carrot diced

  • 1 cup passata (240ml)

  • 1 cup stock – vegetable or chicken

  • 2 x 400g tins of cannellini or haricot beans

  • 1 small apple peeled and grated

  • 1tsp smoked paprika

  • 1 tsp dried thyme

  • 1 tsp apple cider vinegar

  • Knob of butter

  • Salt and pepper to taste

  1. Heat a pan

  2. Add the oil

  3. Fry celery and carrot for a couple of minutes

  4. Stir in everything else except butter and seasoning

  5. Bring to the boil

  6. Reduce the heat and simmer for 40 minutes

  7. When veg is soft and the sauce has reduced add the butter and seasoning

 

Fridge 3 days

Freezer 3 months
