Fajitas - Fakeaway

The following is for 1 person using 1 chicken breast and veggies - I use 1 pepper and 1 medium onion.

Scale up or down depending on how many people you are cooking for and increase if you like a stronger flavour.

  •  1 tsp ground cumin

  • ½ cayenne pepper (or smoked paprika if you don’t like spicy food)

  • ½ tsp oregano

 

  1. Heat a pan, add some sunflower oil and fry the chicken until sealed on the outside then add the spices and veggies until cooked.

I make a homemade tomato salsa and guacamole to serve alongside lettuce, grated cheese and sour cream.  You could simply serve it up with slices of avocado and chopped fresh tomatoes.

I have 1 tortilla and a little brown rice on the side.
