WARM LENTIL SALAD
2 portions
Olive oil to fry
2 salmon fillets
75g chorizo chopped into small chunks
100g asparagus tips or green beans
400g cooked green or green/puy lentils
1 tsp dried rosemary or 2 sprigs of fresh
SALAD DRESSING
5 tbs olive oil
3 tbs balsamic vinegar
1 tbs maple syrup
Salt and pepper
Mix all the above together giving it a good whisk or shake in a glass jar.
PREPARING THE DISH
Heat the oil in a frying pan
Pat the salmon dry and season with salt and pepper
Cook the salmon skin side down for 5 minutes on each side until cooked through then set aside
Fry the asparagus in the pan for a couple of minutes
Add the chorizo, rosemary and lentils and cook for around 5 minutes until everything is hot
Season to taste
Stir in a few tablespoons of the dressing – you can always add more before eating if you wish

This recipe was taken from Lorraine Pascale’s Fast, Fresh and Easy Food. It’s a quick, easy healthy recipe that incorporates lentils. You can also swap the salmon for other proteins such as chicken or paneer. If you don’t like chorizo you can add half a tsp of smoked paprika to get the flavour.
