WARM LENTIL SALAD

2 portions

  • Olive oil to fry

  • 2 salmon fillets

  • 75g chorizo chopped into small chunks

  • 100g asparagus tips or green beans

  • 400g cooked green or green/puy lentils

  • 1 tsp dried rosemary or 2 sprigs of fresh

 

SALAD DRESSING

  • 5 tbs olive oil

  • 3 tbs balsamic vinegar

  • 1 tbs maple syrup

  • Salt and pepper

Mix all the above together giving it a good whisk or shake in a glass jar.

 

PREPARING THE DISH

  1. Heat the oil in a frying pan

  2. Pat the salmon dry and season with salt and pepper

  3. Cook the salmon skin side down for 5 minutes on each side until cooked through then set aside

  4. Fry the asparagus in the pan for a couple of minutes

  5. Add the chorizo, rosemary and lentils and cook for around 5 minutes until everything is hot

  6. Season to taste

  7. Stir in a few tablespoons of the dressing – you can always add more before eating if you wish

  8. Serve

This recipe was taken from Lorraine Pascale’s Fast, Fresh and Easy Food.  It’s a quick, easy healthy recipe that incorporates lentils.  You can also swap the salmon for other proteins such as chicken or paneer.  If you don’t like chorizo you can add half a tsp of smoked paprika to get the flavour.
