VEGGIE & BEAN CHILLI
Serves 2
1 medium sweet potato
½ tsp cayenne pepper
½ tsp heaped ground cumin
½ tsp cinnamon
Olive oil
1 small red onion
½ red pepper
½ yellow pepper
1 garlic clove
1 fresh chilli (red or green)
1 tin kidney beans (including their juice)
1 tin tomatoes
15g coriander (2-4 tbs as much as you like)
Preheat oven to 220c / gas mark 6
Peel and chopped sweet potato into bite sized chunks
Sprinkle with a little of the spices
Roast for 30-45 mins until cooked
Chop peppers and onions into bite sized chunks
Crush or slice the garlic and chilli
Heat the oil and fry the onions, garlic, onions and peppers 5-10 minutes until start to soften
Add the coriander stalks, chilli and spices
Add the beans (their juice) and tomatoes
Bring to the boil then simmer for 20-25 minutes until thickened
Stir in the sweet potato at the end.
