VEGGIE & BEAN CHILLI

Serves 2

  • 1 medium sweet potato

  • ½ tsp cayenne pepper

  • ½ tsp heaped ground cumin

  •  ½ tsp cinnamon

  • Olive oil

  • 1 small red onion

  • ½ red pepper

  • ½ yellow pepper

  • 1 garlic clove

  • 1 fresh chilli (red or green)

  • 1 tin kidney beans (including their juice)

  • 1 tin tomatoes

  • 15g coriander (2-4 tbs as much as you like)

  1. Preheat oven to 220c / gas mark 6

  2. Peel and chopped sweet potato into bite sized chunks

  3. Sprinkle with a little of the spices

  4. Roast for 30-45 mins until cooked

  5. Chop peppers and onions into bite sized chunks

  6. Crush or slice the garlic and chilli

  7. Heat the oil and fry the onions, garlic, onions and peppers 5-10 minutes until start to soften

  8. Add the coriander stalks, chilli and spices

  9. Add the beans (their juice) and tomatoes

  10. Bring to the boil then simmer for 20-25 minutes until thickened

  11. Stir in the sweet potato at the end.
