MILLET MASH

1 portion

Millet - cook ¼ cup of millet as above.

Cauliflower - cook 6 medium sized florets of cauliflower by boiling or steaming for 6-8 minutes until soft.  Reserve a couple of tablespoons of the cooking liquid.

 

Add the millet and cauliflower to a food blender along with:

¼ garlic clove – adjust to taste

Sea salt and pepper – to taste

1 tablespoon of fresh parsley – or another herb of choice

  • Blitz until smooth.

  • Check the consistency and gradually add some of the reserved cauliflower cooking water until you get a texture you like.  You can add olive oil but go easy otherwise it can be too oily.
