MAYONNAISE

  • 1 egg yolk

  • 1tbs apple cider vinegar

  • ½ tsp lemon juice

  • ¼ tsp mustard

  • Pinch cayenne

  • Pinch salt

  • ½ cup olive oil or safflower oil or blend of the two.

Place all the ingredients in a cup blender. Start blitzing with the blender head very low in the cup until is has started to emulsify then slowly move the blender head up the cup.
