CHICKEN CHASSEUR - HOMEMADE SAUCE

  • 1 litre chicken stock

  • 100ml white wine

  • 25g butter

  • 1 heaped tbs flour

  • 2 garlic cloves

  • ½ tsp dried thyme

  • ½ tsp dried basil

  • ½ tsp oregano

  • 1 tbs tomato puree

  • 2 carrots

  • 2 celery sticks

  • 2 small onions

  • 2 chicken breasts

  • Salt and pepper to taste

 

  1. Fry the vegetables

  2. Pour in and bubble off the wine

  3. Add the flour and butter

  4. Add everything else

  5. Bring to the boil

  6. Trasnfer to the oven

  7. Bake at 150c at 45 minutes then at 200c for another 45 minutes

I like this served with brown rice and steamed green veggies.
