BREAKFAST MUFFINS

  • 1 large egg

  • 75g natural yogurt

  • 25ml rapeseed or sunflower oil

  • 50g apple sauce (or another half banana)

  • Half banana

  • 2 tbs honey

  • ½ tsp vanilla

  • 100g spelt flour

  • 25g oats

  • 3/4 tsp baking powder

  • 3/4 tsp bicarb of soda

  • 3/4 tsp cinnamon

  • Pinch salt

  • 50g blueberries (or sultanas)

  • 1 tsp sunflower seeds

  • 1 tsp pumpkin seeds

  • 1 tsp flax seeds

 

  1. Preheat oven to 180c / 160fan / gas mark 4

  2. Mix dry ingredients together (leave out the seeds to sprinkle them on top)

  3. Mix wet ingredients together

  4. Mix the wet and dry ingredients together until combined but don’t overmix or it will make the muffins heavy

  5. Sprinkle on the seeds

  6. Divide between 6 muffin cases evenly
