BLACK BEAN, SWEET POTATO AND QUiNOA BURGERS

  • 1 medium to large sweet potato part cooked

  • 1 tin drained black beans

  • 50g cooked quinoa (1/4 cup uncooked, see quinoa factsheet for cooking instructions)

  • 1.5 tsp cumin

  • 1 tsp smoked paprika

  • ½ garlic powder

  • ¼ tsp chilli powder

  • Salt and pepper

 

  1. Part mash the beans and sweet potato in bowel, keep some chunky for a good texture

  2. Add the quinoa and spices and give it all a good mix

  3. Split into 4 large burgers and chill for around 1 hour if you can

  4. Cook in the oven at 180c for around 45 minutes
