BLACK BEAN, SWEET POTATO AND QUiNOA BURGERS
1 medium to large sweet potato part cooked
1 tin drained black beans
50g cooked quinoa (1/4 cup uncooked, see quinoa factsheet for cooking instructions)
1.5 tsp cumin
1 tsp smoked paprika
½ garlic powder
¼ tsp chilli powder
Salt and pepper
Part mash the beans and sweet potato in bowel, keep some chunky for a good texture
Add the quinoa and spices and give it all a good mix
Split into 4 large burgers and chill for around 1 hour if you can
Cook in the oven at 180c for around 45 minutes
